Here is what we thought of the cottage cheese bread rolls recipe from Mom's Dish:
Flavor: These have a fair amount of sugar, so they're more of a sweet roll which can be surprising if you're not expecting it! You can cut down on the sugar to make a more savory roll if you like (more on that below)
Texture: Cottage cheese rolls use baking soda instead of yeast, expect a different texture than your typical rolls. These are going to be a bit more dense (less fluffy), with more of a soft and chewy texture similar to a whole wheat roll.
Appearance: While these definitely look like rolls, they're also not as tall and fluffy as some yeast-risen rolls might appear and instead look a bit more rustic, still a beautiful addition to any spread.

Whole Grain Cottage Cheese Rolls: We've made this recipe from Mom's Dish as-written using regular all purpose flour, and also using half whole wheat flour/half white flour.
We found the whole grain version to be smoother on the outside, a beautiful golden brown color, and a bit softer, while the white version rose a bit more and cracked as it was baking, yielding a more rustic look.
The half whole wheat version also yielded a slightly nuttier, heartier roll that Stacie's family loved even more than the original.
Gluten-Free Cottage Cheese Rolls: You can make gluten-free cottage cheese rolls by substituting a high-quality gluten-free flour mix such as gfJules or this homemade gluten free flour recipe, and adding 4-8 ounces of lukewarm water.
Disclaimer: we haven't tried this yet, but Celeste regularly creates gluten free bread recipes and thinks this method will work. We'll test it for you soon and share an update!

Make it Savory: One of the best things about these buns is their versatility!
By reducing or omitting the sugar, you can easily transform them into a savory treat, which makes them ideal for pairing with a variety of dips and spreads.
Try adding Italian seasoning + a little garlic salt, or chives, bacon, and a bit of shredded cheddar cheese. There are so many options!
Different Shapes: You can use this dough to make crescent rolls, breadsticks, or any other type of roll! (who wants to try making cinnamon rolls? WE DO!)
