- We've found an immersion blender works the very best for any recipe in which you need to blend cottage cheese. We don't recommend using a high-speed blender or a function other than "pulse" on your food processor, because blending the cottage cheese too much can liquidate it, changing the texture.
- Letting the cottage cheese bark sit at room temp for 5-10 minutes before eating will improve the texture.
Variations
Cottage cheese bark is so versatile! You can easily create any flavor combination to match the occasion or your taste preferences.
Use cottage cheese and honey as a base, and try the some of these different flavors:
- Strawberry Cheesecake - swap ¼ cup strawberry puree for the peanut butter cottage cheese mixture. Top with crushed graham crackers, chopped fresh strawberries, and a drizzle of honey.
- Cookies and Cream - Top with crumbled chocolate sandwich cookies and a drizzle of dark chocolate.
- Blueberry Almond - Swap almond butter for the peanut butter, and top with fresh blueberries, slivered almonds, and a drizzle of honey or maple syrup
- Apple Pie - Omit peanut butter. Top with finely diced fresh apples that have been tossed with cinnamon and your favorite granola.
- The King (peanut butter + banana) - In addition to drizzling peanut butter over the top, add sliced bananas and a sprinkle of cinnamon

- 2 cups cottage cheese (we prefer full-fat)
- 2 tablespoons honey
- ⅓ cup peanut butter (divided)
- ¼ cup chocolate chips
- 2 tablespoons chopped peanuts
Instructions
- Line a small, rimmed baking sheet with parchment paper and set aside.
- Combine cottage cheese, honey, and 3 tablespoons (about 60 grams) of peanut butter in a medium bowl.
- Use an immersion blender or the pulse function on a food processor to blend just until smooth. Do not over-mix or it will liquify the cottage cheese.
- Spread the cottage cheese mixture evenly over prepared baking sheet without touching the edges of the pan (to avoid sticking)
- Melt chocolate chips in a microwave-safe bowl for 30-45 seconds at full power. Warm peanut butter in microwave for 10-15 seconds just until softened (if you warm it too long, it will burn)
- Alternate dollops of melted chocolate and peanut butter on top of the mixture, and swirl with a toothpick to get a marbled effect.
- Sprinkle with chopped peanuts if you want, and freeze for at least 3 hours or until solid.

While full fat cottage cheese is our favorite and lends a creamier texture and richer flavor, fat-free and low-fat varieties will work as well.
Unfortunately, there isn't a dairy-free cottage cheese available in stores. You could try this recipe with a dairy free cottage cheese recipe, and they could possibly work, but we haven't tried it so we can't vouch for it. If you do, will you come back and let us know if it worked?
